The Root Vegetable Behind One of the World's Longest-Lived Populations
For most of the last century, it made up nearly seventy percent of one island's diet. Here's what the science says about why that might matter, and how to cook it right.

You've probably walked past the anti-aging aisle. Serums, powders, pills, all promising to slow the clock down, all at a premium price. On a small island in Japan, people did something different for most of the last century. They ate a root that cost almost nothing, and many of them lived past 100. That root is the sweet potato. Let me explain… The Island Where People Lived the Longest Okinawa, Japan, has one of the highest shares of people who live past 100 anywhere on Earth. Scientists have studied the island's diet for decades. They want to know why. One food kept showing up more than any other: sweet potato. Before World War Two, it gave close to sixty-nine percent of daily calories there. That figure comes from a 2009 study by Bradley Willcox, Craig Willcox, and Makoto Suzuki. It ran in the Journal of the American College of Nutrition. That's not a garnish. It was the meal itself, eaten nearly every day, for most of a lifetime. The diet has shifted since then. Rice and other foods make up more of the plate now. But the old pattern still stands out to anyone who studies long-lived people around the world. What's Actually Inside It So what does a sweet potato give you? Mostly a deep orange pigment called beta-carotene. Call it the pigment from here on. Your body turns the pigment into vitamin A. Eyes and immune health both depend on it. One medium baked sweet potato, skin on, carries about 1,095 micrograms of vitamin A. That's more than a full day's amount, per USDA data. And it costs you just 103 calories. That same potato also carries close to four grams of fiber. It has 542 milligrams of potassium too, more than a banana, with a fraction of the sugar. The Vienna Study on Blood Sugar Sweet potato research isn't only about vitamin A. In 2004, a team led by Bernhard Ludvik ran a trial at the University of Vienna. They tested a white sweet potato extract called Caiapo. Sixty-one people with type 2 diabetes took part, over twelve weeks. Half got Caiapo. The rest got a placebo. By the end, the Caiapo group's blood sugar marker, called HbA1c, dropped from 7.21 percent to 6.68 percent. The placebo group showed no real change. Cholesterol got better too. That's a strong extract, not a baked potato at dinner. But it's real, peer-reviewed proof that this plant carries more than just vitamins.
Purple, Orange, and the Glycemic Question Not all sweet potatoes are the same color, and the color matters. The purple-fleshed kind carries its own pigment. It's a type of anthocyanin. That's close to what colors blueberries, per a 2021 study in Scientific Reports. Orange sweet potatoes lean harder into beta-carotene instead. How you cook it matters too. Boiled sweet potato has a glycemic index near forty-four. A boiled white potato runs seventy-eight to eighty-two, per the University of Sydney's own database. Bake it instead, and that gap shrinks, sometimes almost to nothing. If blood sugar is a concern, boiling beats baking. Three Things Worth Knowing Before You Cook
